I don't know what I was thinking. I somehow decided this week would be a great week to start two, TWO challenges. We shall see how it goes.
One thing I forgot to do was post what the daily spending challenges are for this week, so here they are: (Day 1 was yesterday)

I won't do this for every day, but I got started on day 2 this morning. I started by just look at my "pantry". Which is really three different cupboards. They're not exactly overflowing, but they are fairly well-stocked, especially the baking things. So here are my 3 before pictures, if I get around to it, I'll share afters on day 7.
