I've been trying to get better at catching up on my 12 new recipes for 101 in 1001. A source I've been searching for new recipes is Elizabeth's Cooking Experiments. The fabulous thing about Liz's blog is that it's real. She's a working woman, married, a lawyer, and everything she puts on her blog is something just about everyone can make.
I've been looking for some ways to jazz up our summer grilling, and I came across this recipe. Like Liz, I don't know anyone who doesn't love Wendy's spicy chicken sandwiches. So when she posted the recipe, I immediately put it on our menu. Through the ways of life, it kept getting passed off and postponed. But last night, we finally sat down and made it.
I wanted to stay a little healthier, and grill not fry, so I omitted the flour, and just dredged the chick in the sauce/water mix, then the spices and repeated it. We grilled two chicken breasts on the grill and cut them in half.
The coating largely fell off of one breast, and remained on the other. So we split them up and each tried one. (We cut them in half) While I like spicy, I had to remove the coating from the second. Holy cats, was that baby spicy.
We'll make this again, without question, and moving from frying to grilling worked just fine, and in my opinion, didn't sacrifice any taste.
