Having such a busy holiday weekend, I'd forgotten to pick up something to bring to my parents to share. So, I examined the fridge and realized I had a load of cream cheese, a lime, and a bottle of lime juice. I always have graham cracker crumbs on hand, so I decided I would try out a Key Lime Cheeseball recipe I'd found on recipezaar awhile back.
I whipped it up, stuck it in the fridge and a few hours later we were on our way to the rents for some 4th of July partying. I didn't get around to taking a picture of mine, but it closely resembled the photo above. I served it with graham crackers, because that's what I had on hand, and it was a HUGE hit. Huge.
We only ate about half of it though, with about 20 people there, so next time I will make a half recipe, but it will definitely appear on our table again. The only change I'd make is to add more lime juice, as it was very un-limey.
