Chicken Lasagna | Recipe

This recipe is pretty much the only kind of lasagna I like. It's my mom's recipe, though in the interest of full disclosure, it's not a beloved recipe from my childhood. I actually cannot recall my mom ever making this recipe until I was well into college.

Why is this the only lasagna I like? Well, in case we haven't met, let me introduce myself. dm, pickiest eater this side of the river. I like red sauce, and I like hamburger, but put the two together, and g-ross, I want to puke. Harsh, maybe, but that's how I roll. The same goes for ground sausage. Just leave it alone, peeps.

So, yesterday, because we had a "Superbowl Commercials" party rather than a "Superbowl Party", we decided to forgo the traditional superbowl fare and I whipped up this lasagna.

Be forewarned, this is not for the faint of heart. At all. There's 48 oz (THREE POUNDS) of various cheese in here.


Here it is, all ready to go into the oven. 

And here it is, hot, bubbly and melty, 3 seconds out of the oven.
 
Recipe: Linda's Chicken Lasagna
Cook and drain lasagna noodles needed for up to 3 layers in a 9 X 13 pan
Onion
Green Pepper
2 T. Butter
3 Large Chicken Breasts
Brown chicken breasts in butter and diced onion and green pepper
Cube chicken into bite size pieces
2 - 10 3/4 oz cans Creamy(Preferred) Chicken or Cream of Chicken soup
Add millk until you get the consistency of a regular lasagna sauce(add less milk if you use lots 
of cheese)
Mix green pepper, onion and butter with soup and milk

Mozzarella cheese(shredded) - 16 oz
Cream cheese(cubed) - 1 - 8 oz pkg
Cheddar cheese(shredded) - 16 oz
Parmesan cheese(shredded) - 8 oz

Layer as follows, (or as desired), sauce mixture, noodles, chicken and cheeses, repeat
Bake for 50-60 minutes at 375

I make no changes to this recipe when I make it. I have an aunt who leaves out the green peppers, but really, I don't think it's half as good without them.

  1. This is the most amazing Lasagna! I had it one of dm wedding showers and have been in love with it ever since. I have the recipe now and am going to make it all for myself!
